"The North Strand" is a long fermented 20% rye sourdough loaf. The only ingredients are flour, water and salt. This loaf began its life on Tuesday. It was mixed on Wednesday, shaped on Thursday and baked on Friday. Slow food is the best food. Flavorsome, nutty, yummy.
