"The North Strand" is a long fermented 20% rye sourdough loaf. The only ingredients are flour, water and salt. This loaf began its life on Monday. It was mixed on Tuesday, shaped on Wednesday and baked on Thursday. Slow food is the best food. Flavorsome, nutty, yummy.
